Leeks in Yogurt Sauce
- 2 tbsp lemon juice
- 2 sprigs fresh thyme
- 2 sprigs parsley
- salt and ground pepper
- grated rind ½ lemon
- 4 leeks, trimmed and slices
- Sauce ..........
- 1 ¼ cups EASIYO yogurt
- 1 tsp mild mustard
- 4 egg yolks, beated
- salt and ground pepper to taste
- 1 tbsp lemon juice
In a saucepan combine lemon juice, parsley, lemon rind, thyme, salt and pepper with 2 ½ cups water.
Ring to boil and simmer for 10 minutes. Strain.
Place leeks in saucepan.
Pour strained lemon stock over leeks.
Bring to boil. Cover and simmer 10-15 minutes or until leeks are tender but not mushy.
Drain and arrange on serving dish.
To make sauce and combine all the ingredients in the top of a double boiler and cook stirring over just simmering water until the sauce thickens.
This will take 10-15 minutes.
Pour the sauce over the leeks and serve hot.
