Make one of Easiyo Greek style yoghurts.

Place a sieve lined with a muslin or fine soft cloth over a large bowl. Put your freshly made yoghurt into the sieve and allow to drain for about 24 hours.
The whey will gather in the bowl and can be stored for use as a stock when cooking.

The reduced yoghurt or yoghurt cheese is now ready to flavour.

We use a little smoked paprika with finely chopped fresh or dried herbs such as thyme, rosemary, lemon myrtle & dill, or add some finely chopped garlic or minced sun dried tomatoes.

We use this as a alternate spread to margarine or buter, as a dip or add a little of the whey back into it to create an interesting mayonnaise.
Can also add mixed spices & cardoman if you want a sweeter mix.

All can be used instead of butter when making scone doughs ... and they come out lovely and lght.
